Recibieron un pr\u00e9stamo de la Asociaci\u00f3n de la Peque\u00f1a Empresa y una ayuda del Programa de Subvenciones a la Hosteler\u00eda de Chicago, pero ninguna de las dos ofrec\u00eda soluciones a largo plazo.<\/p>\n<p>Como parte de nuestro <a href=\"https:\/\/borderlessmag.org\/es\/categoria\/restaurantes-de-inmigrantes-de-chicagos-durante-el-covid-19\/\">serie sobre c\u00f3mo los restaurantes de inmigrantes han sobrevivido a la pandemia<\/a>Borderless Magazine habl\u00f3 con Gabriel y Sarah sobre su trayectoria como restauradores y sobre c\u00f3mo la pandemia de COVID-19 ha supuesto un reto en su \u00faltima empresa.<\/p>\n<p><strong>Gabriel<\/strong>: En diciembre nos sentamos y analizamos detenidamente nuestras diferencias de p\u00e9rdidas. Hicimos una comparaci\u00f3n entre cerrar y esperar a que reabriera el comedor interior y permanecer abiertos, y habr\u00edamos tenido menos p\u00e9rdidas si hubi\u00e9ramos cerrado.<\/p>\n<p>Las subvenciones y los pr\u00e9stamos ayudaron sin duda, pero esos fondos se utilizaron estrictamente para pagar n\u00f3minas y alquileres. Pero es como una tirita en una herida abierta: no puede hacer mucho. Si no hubi\u00e9ramos recibido esas ayudas, habr\u00eda m\u00e1s posibilidades de que cerr\u00e1ramos.<\/p>\n<p>Tuvimos la suerte de que la prohibici\u00f3n de los locales cerrados se produjera justo cuando abrimos, porque no ten\u00edamos mucho personal. Est\u00e1bamos a punto de contratar. Por eso, fue sostenible, pudimos salir adelante. Pero perd\u00edamos, como todo el mundo.<\/p>\n<p>El impacto de las p\u00e9rdidas fue personal. Al fin y al cabo, nos sacrificamos y pagamos todo nosotros mismos: solo ten\u00edamos que seguir acudiendo a nuestros fondos.<\/p>\n<p><strong>Sarah<\/strong>: Intentar captar un mercado en un espacio en el que todo el mundo intentaba hacer lo mismo, cuando los restaurantes ten\u00edan que intentar ganar negocio como restaurante para llevar o de reparto, ese fue probablemente el mayor reto.<\/p>\n<p>La mayor\u00eda de la gente no pide brunch para llevar o a domicilio, as\u00ed que fue dif\u00edcil convencer a la gente de que nos hiciera un pedido y de que nuestra comida iba a estar deliciosa en su casa. Desde el punto de vista operativo, tuvimos que probar todos nuestros platos para asegurarnos de que se transportaban bien en recipientes. La gente pide comida para llevar y la publica en Instagram o TikTok.<\/p>\n<p><strong>Sarah<\/strong>: Tenemos esta bebida Purple Haze, un caf\u00e9 con ube y leche de coco, y leche normal o de avena. Explot\u00f3 en TikTok por los colores: es un degradado que se vuelve morado cuando lo remueves. Ahora vendemos unos 40 entre semana y cerca de 100 los fines de semana.<\/p>\n<p><strong>Gabriel<\/strong>: Pasamos por un mont\u00f3n de ube.<\/p>\n<p>Ten\u00edamos en mente las redes sociales cuando dise\u00f1amos el local: quer\u00edamos que cada cent\u00edmetro fuera \"Instagramable\". Sab\u00edamos que eso es lo que se necesita para tener \u00e9xito. Tambi\u00e9n estamos un poco fuera de lo com\u00fan, en la misma calle de Broadway, y ten\u00edamos que asegurarnos de que hubiera una raz\u00f3n para venir aqu\u00ed. Cuando abrimos, no est\u00e1bamos seguros de si a la gente le gustar\u00eda el concepto. Le prepar\u00e1bamos diferentes platos en nuestra casa para mostrarle los distintos perfiles de sabor que busc\u00e1bamos. La base del men\u00fa es un brunch americano, como pollo y gofres. Pero Will a\u00f1ade ese toque en el que se pueden apreciar los sabores de la formaci\u00f3n particular de Sarah o de la m\u00eda.<\/p>\n<p>Un buen ejemplo es nuestra versi\u00f3n del s\u00e1ndwich Philly. La cu\u00f1ada de Sarah hace un adobo que nos encanta, y se lo prepar\u00f3 a Will. \u00c9l tom\u00f3 su receta y la hizo m\u00e1s comercial, creando este s\u00e1ndwich de pollo Philly con estos sabores filipinos. Tiene adobo, pero tambi\u00e9n queso provolone, pimientos y cebollas. Lo m\u00e1s picante es la influencia latina.<\/p>\n<p>En nuestro vuelo de tocino, tenemos este tradicional grano de pimienta de arce americano. Pero tambi\u00e9n hacemos un Taj\u00edn rub. Es un condimento de chile y lima con el que crec\u00ed, lo comemos con toda nuestra fruta. Mango, sand\u00eda, cualquier tipo de fruta, simplemente lo echas ah\u00ed. As\u00ed que decidimos hacerlo con el tocino y result\u00f3 muy bueno. Los pimientos en vinagre que tenemos, la salsa verde que hacemos -cosas m\u00e1s tradicionales, como la quesadilla- algunas de nuestras bebidas son muy latinas.<\/p>\n<p>El alcohol m\u00e1s popular en Argentina es el fernet, as\u00ed que lo incorporamos a algunas de nuestras bebidas. Nuestro Liquid Sunshine se basa en la bebida salvadore\u00f1a agua de fresca, que es b\u00e1sicamente un zumo de frutas con fruta troceada.<\/p>\n<p>Ahora que hemos abierto al 100%, nos enfrentamos a muchas dificultades para conseguir determinados productos e ingredientes. Sin duda hay escasez: hemos tenido dificultades para conseguir panceta de cerdo, spam, determinadas marcas de licor, zumo de calamansi y extracto de ube, por nombrar algunos. Uno tiene asma, y cuando nos enteramos de que COVID era una cosa respiratoria, est\u00e1bamos muy, muy asustados de enfermar.<\/p>\n<p><strong>Gabriel<\/strong>: Soy muy optimista sobre lo que hemos planeado para el futuro. Creo que a la mayor\u00eda de la gente le gusta venir aqu\u00ed. Y a muchos tambi\u00e9n les gusta nuestra historia, de d\u00f3nde venimos.
