Imagine that, 32 saucepans.\u201d<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena learned the secrets of one of Mexico\u2019s famed dishes as his grandmother had him measure each ingredient, from smoky pasilla chile to raisins, for sweetness.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cShe would tell me the purpose of each ingredient. We added bread and tortillas so the food would be more abundant, chocolate to give it more flavor,\u201d Bahena said.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:image {\"id\":6230,\"sizeSlug\":\"large\",\"linkDestination\":\"none\"} -->\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-6230\" src=\"https:\/\/borderlessmag.org\/wordpress\/wp-content\/uploads\/2021\/12\/CF_Borderless_MissMoles_065-1024x684.jpg\" alt=\"mole, chef, Mexican, Chicago, coronavirus, restaurant, mother, recipe\" \/>\r\n<figcaption>Bahena prepares side dishes and sauces alongside his mother, Clementina Flores, ahead of the dinner rush at Mis Moles Restaurant on June 4, 2021. Bush and former Mexican President Vicente Fox. He has opened, and later closed, restaurants of his own around Chicago, including Ixcapuzalco, Chilpancingo, Geno\u2019s Bar &amp; Grill and Mi Sue\u00f1o Su Realidad.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena is now a partner and executive chef at Mis Moles Restaurant in Chicago\u2019s Irving Park neighborhood. The business opened during the pandemic and, like countless others nationwide, has had to contend with <a href=\"https:\/\/borderlessmag.org\/2021\/04\/08\/a-pandemic-pivot-uptown-chef-launches-virtual-indian-restaurant-to-stay-safe-and-keep-cooking\/\">changing government restrictions<\/a> and <a href=\"https:\/\/borderlessmag.org\/2021\/05\/24\/from-streetscape-to-pandemic-to-cta-rebuild-asia-on-argyle-businesses-fight-to-survive\/\">a slow economy.<\/a> Despite advertisements for workers posted online and outside of the restaurant, Mis Moles remains understaffed.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena himself has also been struggling. He contracted COVID-19 in November and was hospitalized for nearly three weeks.\u00a0To this day, he suffers from shortness of breath and fatigue while cooking and carrying food up and down the flight of stairs to the restaurant\u2019s freezer. But he has to work: He\u2019s currently the restaurant\u2019s only full-time cook. Between staffing shortages, financial woes and Bahena\u2019s long-haul COVID, Mis Moles\u2019 future is now in jeopardy.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:heading -->\r\n<h2 id=\"h-elegance-from-the-heart-of-mexico\"><span id=\"elegance-from-the-heart-of-mexico\">\u201cElegance from the Heart of Mexico\u201d<\/span><\/h2>\r\n<!-- \/wp:heading -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena\u2019s fascination with cooking began in the kitchen with his grandmother, but he became fixated on it after making his very first meal during an argument with his mother.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cI wanted to cook something, but I was already full,\u201d he said. \u201cI had eaten mangoes and plums, but I wanted to make something and cook it myself. My mom told me, \u2018No, sit at the table and eat what I serve you.\u2019\u2019\u2019 Playing the middleman, Bahena\u2019s father allowed him to cook as long as he finished every morsel. Bahena made chilaquiles and ate every bite.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:image {\"id\":6232,\"sizeSlug\":\"large\",\"linkDestination\":\"none\"} -->\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-6232\" src=\"https:\/\/borderlessmag.org\/wordpress\/wp-content\/uploads\/2021\/12\/CF_Borderless_MissMoles_180-1024x684.jpg\" alt=\"mole, chef, Mexican, Chicago, coronavirus, restaurant, mother, recipe\" \/>\r\n<figcaption>The kitchen staff plates the first dinner order of the day, grilled chicken with mole negro, at Mis Moles Restaurant June 4, 2021. Photo by Camilla Forte\/Borderless Magazine<\/figcaption>\r\n<\/figure>\r\n<!-- \/wp:image -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>In 1982, Bahena left Mexico for Chicago, where he knew a couple of people who had worked at his father\u2019s ranch in Tepatulco. \u201cI came when I was a teenager because I had a broken heart,\u201d he said of his breakup with his first girlfriend. \u201cI thought it was the end of the world.\u201d<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>A few months after arriving in Chicago, Bahena tried to enroll in the culinary program at St. Augustine College, but he was waitlisted and had to prove himself a better cook than the other prospective students. True to form, Bahena made chicken with mole for the entrance examination. He got in.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>At the college, Bahena honed the skills he had developed alongside his grandmother, and more. After graduating, he launched a catering business whose name, A Taste of Elegance from the Heart of Mexico, encompassed the cooking style that would make him a nationwide success. At the same time, Bahena became the managing chef for Rick Bayless at his restaurants Frontera Grill and Topolobampo. Bahena later opened several restaurants, gradually selling each to move onto new ideas and businesses.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>In 2020, Bahena was working in Massachusetts when he received a message from Branko Podrumedzic that would bring him back to the Midwest.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:image {\"id\":6229,\"sizeSlug\":\"large\",\"linkDestination\":\"none\"} -->\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-6229\" src=\"https:\/\/borderlessmag.org\/wordpress\/wp-content\/uploads\/2021\/12\/CF_Borderless_MissMoles_053-684x1024.jpg\" alt=\"mole, chef, Mexican, Chicago, coronavirus, restaurant, mother, recipe\" \/>\r\n<figcaption>Bahena\u2019s collection of hand carved spoons and molinillos (whisks), which he collected all across Mexico, is a key decor piece in Mis Moles Restaurant. Photo by Camilla Forte\/Borderless Magazine<\/figcaption>\r\n<\/figure>\r\n<!-- \/wp:image -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Podrumedzic, a Serbian immigrant in Chicago, was about to close Little Bucharest Bistro, his 50-year-old Eastern European restaurant that spent its final decade in Irving Park. He was ready to transform it into a new restaurant, and he needed a partner.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Podrumedzic reached out to Bahena with an offer to run the restaurant. \u201cI wanted to retire, and then we found Geno, and I saw how he is one of the best mole chefs,\u201d he said.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena took to the idea. He was ready to open another restaurant, and he wanted to be closer to his mother, who had moved to Chicago in 1992.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena decided the restaurant\u2019s focal point would be the dish that he first learned to cook alongside his grandmother decades before. The chef, who says he has traveled to every municipality in Mexico and tried each state\u2019s moles, set four of his favorite moles aside for the idea for Mis Moles\u2019 menu: negro, rojo, verde and manchamanteles (which translates to \u201cblack,\u201d \u201cred,\u201d \u201cgreen\u201d and &#8220;tablecloth stainers\u201d). Bahena also added regional specialties such as enchiladas, duck in a creamy chipotle sauce and cochinita pibil, a slow-roasted pork dish.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Beyond writing the menu, Bahena redesigned Little Bucharest Bistro interior to suit Mis Moles\u2019 cuisine. He spent $50,000 to paint the restaurant walls blue and pink, buy art depicting scenes from Mexican markets and redo the floor.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:image {\"id\":6233,\"sizeSlug\":\"large\",\"linkDestination\":\"none\"} -->\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-6233\" src=\"https:\/\/borderlessmag.org\/wordpress\/wp-content\/uploads\/2021\/12\/CF_BorderlessMissMoles_53-1024x684.jpg\" alt=\"mole, chef, Mexican, Chicago, coronavirus, restaurant, mother, recipe\" \/>\r\n<figcaption>Bahena handpicked several different art pieces to display throughout Mis Moles Restaurant. Photo by Camilla Forte\/Borderless Magazine<\/figcaption>\r\n<\/figure>\r\n<!-- \/wp:image -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena also moved into an apartment above Mis Moles, where he planned dishes for the restaurant\u2019s June 2020 opening.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>In the meantime, COVID-19 was sweeping across the United States. The number of new reported cases was around 50,000 cases per day, <a href=\"https:\/\/covid.cdc.gov\/covid-data-tracker\/#trends_dailytrendscases\">according to the Centers for Disease Control and Prevention<\/a>, and restaurants were at partial capacity. Many were closing their doors for good.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:heading -->\r\n<h2 id=\"h-we-don-t-have-the-power\"><span id=\"we-dont-have-the-power\">\u201cWe Don\u2019t Have the Power&#8221;<\/span><\/h2>\r\n<!-- \/wp:heading -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>As challenging as opening a restaurant amid a pandemic may be, Mis Moles did relatively well after launching last June. It was open six days a week for patio dining, which was often full. Bahena ran the kitchen, which initially had six other cooks, including Bahena\u2019s mother Clementina Flores, herself a chef. He made every mole from scratch and oversaw many of the restaurant\u2019s operations and its 13-person staff. Few people on Yelp have given Mis Moles fewer than five stars.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>When COVID-19 spiked in the fall, the restaurant moved to takeout only. For the first time in his long career, Bahena put his restaurant on delivery platforms DoorDash and Grubhub. He quipped that the food was too elegant for takeout and delivery and bemoaned the platforms\u2019 steep fees, but he saw no other options.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>The restaurant managed to stay afloat despite the challenges it faced. \u201cThe restaurant did not pay rent for only one month,\u201d said Podrumedzic, whose wife helps him run the restaurant. \u201cMe and my wife, we\u2019re not collecting any salary. He didn\u2019t have enough energy to leave his bed, much less work, and his appetite was gone. A few days later, he had trouble breathing and was coughing constantly. He was diagnosed with COVID-19. As his condition worsened, he went to the hospital, where he remained for nearly three weeks, spending much of that time connected to a ventilator.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>For a while, it was unclear whether Bahena would come back to the business, much less leave the hospital alive. \u201cWhat saved me was the blood transfusion,\u201d he said.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>In November, while Bahena was fighting for his life, the city earmarked $10 million in emergency funding to support Chicago restaurants and bars in need. Podrumedzic didn\u2019t know about the program, known as the Chicago Hospitality Grant, because he didn\u2019t know how to search for and apply for grants.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cI\u2019m old school,\u201d he said. \u201cI will pay someone to help me [apply for grants]. I just don&#8217;t know how to.\u201d Podrumedzic\u2019s last business had received a Paycheck Protection Program loan, but only because one of its employees applied for it on his behalf.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>By winter, with no grants and Bahena in the hospital, the family-owned business was searching for a way forward.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cWe are the bone of the economy, but we don\u2019t have the power like corporations,\u201d Podrumedzic said of small restaurants.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:image {\"id\":6231,\"sizeSlug\":\"large\",\"linkDestination\":\"none\"} -->\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-6231\" src=\"https:\/\/borderlessmag.org\/wordpress\/wp-content\/uploads\/2021\/12\/CF_Borderless_MissMoles_148-1024x684.jpg\" alt=\"mole, chef, Mexican, Chicago, coronavirus, restaurant, mother, recipe\" \/>\r\n<figcaption>Bahena reaches for a pot to prepare the chicken for one of Mis Moles Restaurant\u2019s signature mole dishes on June 2, 2021 in Chicago, Ill. Any physical exertion was beyond him, and leading a restaurant kitchen seemed all but impossible. He was frustrated by his symptoms. Even his short commute to work, down one flight of stairs and then a short walk to the restaurant\u2019s front door, was a challenge.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>But with nobody else to head the kitchen, he felt like he had to return, working fewer days per week and fewer hours per day. All but five of the original seven kitchen workers had left or been laid off, and those that remained weren\u2019t able to work full time. When the one remaining cook left the business to open a juice shop, the restaurant reduced its hours to dinnertime on Fridays and weekends.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Podrumedzic has struggled to hire enough workers to reopen the restaurant during the week.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cIt\u2019s not that they come to ask for us to pay $15 or $20 an hour. It\u2019s that they do not come.\u201d Podrumedzic said.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cObviously, we\u2019re not Lettuce Entertain You \u2014 where we can put one person only for [the grill], one person for salad,\u201d Podrumedzic said. \u201cWe are a small family-owned restaurant of immigrants, and we provide the best food [that] exists. That\u2019s why we are five stars on Yelp and Google.\u201d<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>But Podrumedzic says that good food and a good story haven&#8217;t been enough to save the business and attract new employees. Nationwide, restaurants are facing worker shortages, partially because restaurants and their kitchens are <a href=\"https:\/\/jacobinmag.com\/2021\/05\/service-industry-workers-minimum-wage-welfare-benefits-coronavirus\">COVID-19 hotspots<\/a>. Researchers analyzing morbidity rates in California, for example, found that deaths among line cooks <a href=\"https:\/\/www.medrxiv.org\/content\/10.1101\/2021.01.21.21250266v1.full.pdf\">increased by 60% during the pandemic<\/a>. While the pandemic is receding across much of the United States and more people are getting vaccinated, many restaurants are still struggling to find workers.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:heading -->\r\n<h2 id=\"h-the-truth-is-we-don-t-know\"><span id=\"the-truth-is-we-dont-know\">\u201cThe Truth Is, We Don\u2019t Know\u201d<\/span><\/h2>\r\n<!-- \/wp:heading -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>This April, Podrumedzic gave the restaurant six weeks to stay open unless business got better. By May, as the weather warmed and more Chicagoans received COVID-19 vaccines, things had improved marginally.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>\u201cWe are really busy Friday, Saturday and Sunday,\u201d Bahena said. \u201cBut we have no help. We have the signs, and I have to put out another advertisement for a dishwasher.\u201d\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Without much-needed employees, Mis Moles can\u2019t bounce back from the pandemic. Its owners want to open for weekend brunch but cannot do so with its current five-person team.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:image {\"id\":6228,\"sizeSlug\":\"large\",\"linkDestination\":\"none\"} -->\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-6228\" src=\"https:\/\/borderlessmag.org\/wordpress\/wp-content\/uploads\/2021\/12\/CF_Borderless_MissMoles_027-1024x684.jpg\" alt=\"mole, chef, Mexican, Chicago, coronavirus, restaurant, mother, recipe\" \/>\r\n<figcaption>Bahena stands before Mis Moles Restaurant ahead of opening time on June 4, 2021 in Chicago, Ill. He has enlisted a doctor to monitor his health. \u201cWhen I tell her that I\u2019m sick, she tells me that I should thank god that I\u2019m alive,\u201d he said.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>In the meantime, he does the best to get by, coming into work Friday, Saturday and Sunday. His mother also helps out, but at 73 years old, she no longer has the energy to work full shifts or every day.\u00a0<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Bahena wants the restaurant to continue, but he faces an uncertain future. \u201cThe truth is, we don\u2019t know,\u201d he said.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>If the business doesn\u2019t work out, Bahena\u2019s plan B is to open another elegant Mexican restaurant.
