In 2016, <\/span><\/i><em><span style=\"font-weight: 400;\">immigrant-owned businesses in Chicago <\/span><span style=\"font-weight: 400;\">generated $659 million in income, a<\/span><span style=\"font-weight: 400;\">ccording to a joint <\/span><a href=\"https:\/\/research.newamericaneconomy.org\/report\/new-americans-in-chicago\/\"><span style=\"font-weight: 400;\">report<\/span><\/a><span style=\"font-weight: 400;\"> from the Chicago Mayor\u2019s Office and New American Economy, a bipartisan research and advocacy organization.<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/em><\/p>\n<p><i><span style=\"font-weight: 400;\">Want to share your story with us? Photo by Michelle Kanaar<\/span><\/p>\n<h3 id=\"casa-indigo\">Casa Indigo<\/h3>\n<p><span style=\"font-weight: 400;\">\u201cOur whole soul of cooking here is based on street food in Mexico City,\u201d says Mer Mansuria, the chef and owner of <a href=\"http:\/\/pilsenkitchen.com\/\">Casa Indigo<\/a>, which opened last year in Pilsen, on Chicago\u2019s Lower West Side.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Growing up in the Chicago suburbs to Indian parents, Mansuria wasn\u2019t introduced to a \u201creal\u201d taco until he moved to the city to study at the University of Illinois at Chicago. He still remembers his first bite of a steak taco at <\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, 'Helvetica Neue', Arial, 'Noto Sans', sans-serif, 'Apple Color Emoji', 'Segoe UI Emoji', 'Segoe UI Symbol', 'Noto Color Emoji';\" href=\"http:\/\/www.depasadarestaurant.com\/\">De Pasada<\/a><span style=\"font-weight: 400;\">. \u201cOh my goodness, I\u2019ll never forget that feeling. It was steak, salsa verde, onion, cilantro and lime on the side.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Since then he has been exposed to a lot more Mexican food through his wife, who grew up in Pilsen and whose parents are from Michoac\u00e1n and Mexico City. \u201cAll the women in their family and my family are amazing cooks, and that\u2019s where <\/span><span style=\"font-weight: 400;\">our flavors, recipes, techniques, history of food and love of food<\/span><span style=\"font-weight: 400;\"> come from,\u201d says Mansuria, who incorporates Indian spices and masala into the Mexican food on the menu. \u201cWe\u2019ve tried to do chili rellenos but, hers [his mother-in-law\u2019s] are way better.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cEveryone who works here is a family member,\u201d says Mansuria as he points to the two men behind the counter who are his brothers-in-law. \u201cWe\u2019re all about our community, our neighborhood.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Casa Indigo is located at 1314 W 18th St in Chicago and is open Monday through Saturday.<\/span><\/p>\n<p><span style=\"color: #993300;\"><i><span style=\"font-weight: 400;\">Borderless Magazine is your source for stories that transcend boundaries.
